Refreshing Mojito Recipe

In honor of our Carribean Chic Wish Upon a Wedding Launch party tonight let me introduce you to the raspberry mojito.

Did your mouth just go dry?  Good… because this drink is worth mixing up on a warm summer day to quench your thirst.  Who can resist fresh raspberries and a refreshing mint drink on a day where the weather (and humidity) is way beyond cool?!  To me this is the to die for combination.  Mint + Raspberries = pure happiness.

Raspberry Mojito
Makes 1 serving

8 fresh mint leaves
1/2 ounce freshly squeezed lime juice
1 teaspoon superfine sugar
2 ounces white rum
2-3 ounces seltzer
4-6 fresh raspberries

- Place mint leaves, lime juice and sugar in a highball glass and use the straight end of a wooden spoon to gently press on  leaves to release the flavor.

- Fill glass with ice cubes. Pour in rum. Top off with seltzer. Drop in raspberries, and sip!

Happy Mother’s Day!

To all the beautiful mothers in the world, I hope you enjoy this day of rest! And to my mom, I LOVE YOU!

If everyone was home this weekend, this is what I would be cooking. Don’t worry Mom, I think this is going to have to be tried really soon. If you didn’t know, anything with strawberries and breakfast is our weak spots.

Ingredients needed:

  • 1 loaf French Bread
  • 3 Tablespoons Any Flavor Fruit Spread (You Can Also Use Jelly, Jam, Or Fresh Fruit) – I’m definitely going with the fresh fruit!
  • ½ packages Cream Cheese (4 Oz), At Room Temperature
  • 2 whole Eggs
  • 1 Tablespoon Cinnamon
  • ½ cups Skim Milk
  • 2 Tablespoons Butter

  • Heat skillet or electric griddle to 325 to 350 degrees.
  • Cut french bread into 2-3 inch wide slices. Then, with a paring knife, go back and cut halfway into each slice, in the center, creating a ‘pocket’ that your fruit mixture can be stuffed into.
  • In a bowl, place the room temperature cream cheese and three tablespoons of fruit spread of your choice. (I used all organic blueberry spread in the picture.) Combine well.
  • In a separate bowl, break 2 eggs; add cinnamon and milk and combine well.
  • Now, take fruit mixture and stuff into the ‘pockets’ of your french bread slices. Place on a baking sheet.
  • When done stuffing each piece of bread, completely coat each piece in egg mixture. Make sure all sides are covered. Do all pieces before starting to fry.
  • Put 2 tbsp (you can use less!) of butter into a hot skillet and melt completely. Add all of the bread to the skillet and cook roughly about 3-6 minutes on each side, until it reaches a nice golden brown. You want to make sure the cream cheese mixture heats through.
  • When done cooking, serve immediately with butter and syrup.

Bridal Shower Recipe Recap

A few of the things that we created for the shower were a big hit so I wanted to share those recipes with you all!  The first was a Strawberry and Feta Salad, it was such a hit there was only a few strawberries left for the last person!


Strawberry & Feta Salad

  • 2-3 packages of Spring Green lettuce mix – this will feed about 23-27 people if you have other dishes as well, you can also use Romaine lettuce as well
  • 1 1/2 cups of sliced fresh strawberries
  • 1 container of feta cheese (can vary depending on your liking of feta cheese!)
  • sprinkle in dried cranberries and pine nuts

Toss with Raspberry vinaigrette salad dressing (it only takes a little because the strawberries will act as a dressing as well.  For another fruity variation, you could add some dried apples or fresh pears to the salad as well.

For the drink, we got inspiration from this Delish Green Tea & Mango Splash recipe.  However, I did not have time to make green tea by hand, so I altered the recipe to do this a faster way.  We bought jugs of green tea and mixed with bottles of Mango Nectar.  You need about 2 cups of Mango to 1 cup of green tea.  This tastes great when chilled, so make sure you make this before guests arrive so the ice can do it’s job!   If you’re not serving buffet style, spruce up a glass by adding a mint sprig or a mango slice for each guest.

Lastly, I wanted to do little petit fours for each guest to have as a dessert.  A friend of the family made these, and they were the perfect size after all the regular food we had served.  Doing the mix of Andrea & Jeff’s initials with the flowers was perfect, and we could pass out to everyone during gifts so they could enjoy while watching Andrea open gifts.  I definitely recommend desserts that are more individually sized for showers!

It may be 40 degrees outside but I’m dreaming of these…

Even though it is back to 40 degrees outside, I am going to continue thinking about spring and summer!  This is a perfect drink for entertaining friends at your house, or to serve at a bridal shower.  I love a good punch or drink that combines that sweet and sour factor all in one.

Sparkling Sea Breeze

Yield: Makes 8 1/2 cups

Ingredients

  • 2 cups cranberry juice cocktail, chilled
  • 2 cups pink grapefruit juice, chilled
  • 1 cup cranberry vodka, chilled
  • 1 (750-ml) bottle sparkling white wine, chilled

Macaron Madness

I have seen so many yummy macarons recently on dessert tables and thought I’d post a little macaron goodness on the blog for this Tuesday.
